Chocolate and Beetroot Muffins

Ingredients:-


  • 2 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 250 gms dark chocolate ( cut into cubes)
  • 75 gms butter
  • 2 eggs
  • 1 cup sugar
  • 4 tbsp curds
  • 1/2 cup milk
  • 1 cup beetroot ( grated)
  • Topping
  • Chocolate frosting
  • Chocolate chips, candy

Preparation method:-


  • To make the muffins, preheat the oven to 180ÂșC. Line a muffin tray with 10 paper cases.
  • Sieve flour, cocoa powder, baking soda and baking powder.
  • Melt chocolate and butter. ( on a double boiler or microwave)
  • Beat eggs and sugar in a large bowl till creamy .
  • Add the chocolate mixture, curds, milk.
  • Fold in the flour, add the grated beetroot and mix well.
  • Spoon into the paper cases and bake for 25 minutes or until just springy to the touch. Allow to cool.
  •  Pipe chocolate frosting and Garnish with chocolate chips and candies.


    Serving Suggestions

      Serve 4
